Zesty Prawns with Zucchini Noodles

INGREDIENTS

  • 4 medium zucchinis, spiralised

  • 450g large prawns, peeled and deveined

  • 2 cloves garlic, minced1 tablespoon olive oil

  • 1 teaspoon paprika

  • 1/2 teaspoon red pepper flakes

  • Salt and pepper to taste

  • Fresh parsley, chopped for garnish

  • Lemon wedges for serving

STEP BY STEP

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, approx 1 minute.

  2. Add prawns to the skillet and sprinkle with paprika, red pepper flakes, salt, and pepper. Cook until prawns turn pink and opaque, about 3-4 minutes per side. Remove prawns from the skillet and set aside.

  3. In the same skillet, add the spiralized zucchini noodles. Cook for 2-3 minutes, tossing occasionally, until the noodles are just tender. (Cook for 1 minute less if you prefer a firmer feel to your zoodles.)

  4. Return the cooked prawns to the skillet with the zoodles. Toss everything together until heated through.

  5. Divide the zesty prawn zucchini noodles among four plates. Garnish with chopped parsley and a generous squeeze of fresh lemon.
