INGREDIENTS LIST
700g beef stew meat, cut into bite-sized pieces
2 tsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, diced
2 celery stalks, chopped
1 large potato, peeled and diced
1 litre beef broth
1 can (410g) diced tomatoes, undrained
1 cup lentils, rinsed (green or brown)
1 tsp dried thyme
1 tsp dried rosemary
1 tsp paprika
1 bay leaf
Salt and pepper to taste
STEP BY STEP
Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
Add the onion, garlic, carrots, celery, and potato to the pot. Cook for about 5 minutes until the vegetables start to soften.
Stir in the lentils, beef broth, diced tomatoes, thyme, rosemary, paprika, bay leaf, salt, and pepper.
Bring the mixture to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils and vegetables are tender.
Remove the bay leaf before serving.
