Protein Packed Sichuan Mapo Tofu

INGREDIENTS

  • 400g firm tofu, cubed

  • 2 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 2 green onions, chopped

  • 2 tablespoons Sichuan peppercorns, crushed

  • 2 tablespoons fermented black beans, rinsed and minced

  • 1/4 cup spicy bean sauce

  • 1 cup vegetable broth

  • 1 tablespoon soy sauce

  • 1 teaspoon sugar

  • 1 teaspoon sesame oil

  • 2 teaspoons cornstarch mixed with 2 tablespoons water

  • Cooked rice, for serving

  • Chopped green onions and coriander, for garnish

STEP BY STEP

  1. Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic, ginger, and chopped green onions. Stir-fry for about 1 minute until fragrant.

  2. Add crushed Sichuan peppercorns and minced fermented black beans. Stir-fry for another 1-2 minutes.

  3. Stir in the spicy bean sauce and cook for 1 minute.

  4. Add cubed tofu to the skillet and carefully toss to coat the tofu with the sauce. Pour in vegetable broth, soy sauce, and sugar. Bring to a simmer and let it cook for about 5 minutes. Stir in the sesame oil.

  5. Gently stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes.

  6. Remove from heat and serve hot with cooked rice. Garnish this delicious tofu dish with chopped green onions and coriander.
